JOB DESCRIPTION The Supervisor position reports directly to the Chef Dining Manager of the retreat center. This position is responsible for the coordination and execution of assigned catered events and conferences at the Retreat Center, Hogan Campus Center and other satellite locations. Other responsibilities include assisting in schedules, managing the banquet staff including wait staff, bartenders and utility for designated shifts and events, and following the direction of the Assistant Director of Hospitality Services on catered event logistics and standards of services. This position at times is responsible for overseeing the service of alcohol on campus events and to ensure the City and College alcohol policy on all catered events is enforced. RESPONSIBILITIES
  • Oversee and complete the set-up, method of service and close down of assigned campus catered events. Provide leadership and guidance for the catering banquet staff. Ensure guest satisfaction and quality control. Monitor designated catered events to comply with established standards of service and product quality. Ensure guest safety for allergies and special meal requests.
  • Ensure all storage and service locations are organized and maintained. Keep inventory at par levels and oversee a cleaning and maintenance schedule for all equipment, storage, refrigeration, production and service locations as assigned.
  • Responsible for cooking, cleaning, setting up food lines.
  • Maintains services records and temperatures in accordance with the health code.
  • Customer Service/Quality Control - Monitor all food for quality appearance, taste and temperature. Communicate food quantity and quality uncertainties with the Assistant Director, Executive Chef and culinary staff. Provide and promote friendly and efficient service. Open and professional communication with all customers and staff.
  • Food Pro/Purchasing - Purchases food and non-food products. Food-pro systems responsibilities include; weekly service records, menu maintenance, transfers, recipes, forecasting and reviewing reports. Works with the reporting manager discrepancies and recipes.
  • Staffing/Training - Communicate with other managers/supervisors in regards to shift changes. Communicate with managers/supervisors on staffing issues. Train staff. Participate on the Promotions Committee for unit's specials and promotions.
  • Security - Responsible for unlocking the units on morning shifts, and locking the units of evening shifts. Report any security issues to public safety.
  • Other Duties as assigned QUALIFICATIONS Bachelors of Science in Hotel Restaurant Management or related field preferred. Five to ten years of supervisor / management experience and demonstrated supervisory and leadership skills in catered event execution. Proficient in customer service and interpersonal skills. Knowledge of FoodPro, Kronos, EMS or like Event/Management systems, POS systems, and other related systems for event planning. Current on food, equipment, menu trends and sustainability initiatives. Certified in Food Safety, AllerTrain and TIPS. DAYS & HOURS: Due to the needs of the Dining department and the academic calendar, schedules may change.
